The consumption of foie gras by the French population has varied greatly since 1980. In 1980, the per capita consumption amounted to 53 grams, while in 2000 consumption had increased drastically to over 250 grams. It then rose to 300 grams in 2010 before decreasing over the next decade. In 2021, French people ate an estimated 170 grams of foie gras per capita.
